Vegan Mince Pies
This recipe is one of the easiest vegan baking recipes and therefore is perfect for whipping up on a Sunday afternoon or just a few days before Christmas! Perfect alongside a hot chocolate or glass of vanilla non-dairy milk, you can leave these out for Father Christmas (that's if you don't eat them all yourself!)

What You Need;
350g plain flour
180g hard vegan butter / margarine (such as Stork)
4 / 5 tbsp water
1 jar of vegan mincemeat
Place the butter and flour into a large bowl and crumble between your fingers to create a mixture which resembles breadcrumbs
Slowly add water to the mixture and begin to squeeze the mixture into a ball, continue to add water until the pastry sticks together without crumbling apart
Wrap the pastry in clingfilm and refrigerate for 30 minutes
After 30 minutes, preheat your oven to 200 degrees Celsius and remove your pastry
Roll your pastry to your desired thickness (not too thick) and use a round cutter to create the base of the pies, place these into a cupcake tin (I prefer a shallower mince pie but muffin tins also work well)
Once all your bases have been cut out, fill them with 1 tsp of mincemeat each
Now, using a star shaped cookie cutter you can create a star lid for each mince pie, place these on top of each base and place into the oven for 15-20 minutes until golden
Dust with icing sugar and devour with a glass of non-dairy milk or a hot drink!
