Garlic Mushrooms on Toast
Whilst many people have almost a fear (??) of mushrooms in their foods, especially if it features as the main ingredient (heaven forbid !!), garlic mushrooms on toast is such a delicious breakfast option. Not only is the combination of buttery, garlicky fried mushrooms on crunchy sourdough, or a toasted bagel, either covered in ketchup, or alongside avocado and tofu scramble, one of THE best flavours for any breakfast (or breakfast for dinner), its so cheap and easy to make !! My favourite thing about this recipe is that it pairs so well with so many other breakfast options, but the garlic mushrooms alone can also be stuffed into a cheese toastie, added on top of a carbonara, burger or even ramen!
(serves one)
1/3 pack mushrooms
2 /3 cloves garlic
1/2 big spoonfuls of vegan butter
parsley
salt + pepper
soya / oat cream [optional]
bread of choice
Roughly slice your mushrooms into 1/2cm slices
Add the vegan butter to a large pan on medium heat until melted, once finely chopped, add the garlic and fry for around 1-2 minutes
Add the mushrooms into the butter and garlic, toss until coated throughly, then season to taste
Fry on each side until softened and slightly browned
OPTIONAL ; add a splash of cream to the mushrooms and cook until thickened and warmed through / add in a handful of spinach leaves until wilted
Add parsley to the cooked mushrooms, and season again if needed
Serve the mushrooms (with the buttery sauce) - preferably on toast !
